• 4 Lbs chicken - cut in quarters • 1 Small onion - diced • 1 Large carrot - diced • 4 Oz. - wild mushromms- Shitake or Oyster • 1 Jar - Santa Fe Seasons Fire Roasted Salsa • 2 Cups - chicken stock • 1/4 Cup - vegetable stock In a heavy skillet, heat oil until hot and brown chicken evenly. Place chicken in roasting pot. Add onion, carrot and mushrooms to oil and brown slightly. Stir in oregano and Coyote Cocina Fire Roasted Salsa. Transfer salsa and vegetables to the roasting pot. Stir in chicken and vegetable stock and bring to simmer. Cover pot and place in 350 degree oven for 45 minutes. Stir every 15 minutes. When done mixture should be thick, but not dry.
