DIRECTIONS: • 1 Large Baking Potato • 1 tbsp. black olives-sliced • 3 tsp. Austin Spice - Smoky Hill Salsa • 1/3 Cup Shredded EXTRA SHARP cheddar cheese • 1 1/2 Tbsp. sour cream Bake potato for 1 hour on middle rack at 375 degrees or until tender when pierced with a fork. Let potato cool slightly, cut in half, and scrape the potato pulp into a bowl. Do not scrape so deeply that you tear into the skin. Salt and pepper the skins and reserve. Mash the potato pulp and stir in chopped olives, Austin Spice - Smoky Hill Salsa, cheddar cheese, and sour cream. Fill the potato skins with mixture. Top with extra cheddar cheese and bake 15 more minutes. Remove and enjoy! [Serves 2] Insanely good! © 1997-2004, Salsa2U.com |
