DIRECTIONS: • 1 Lb. boneless, skinless chicken , cut into bite-sized pieces. • -- Lemon pepper, to taste • 1 Large onion, coarsely chopped • 1 12 oz jar of Green Chile Salsa • 2 Tbs minced garlic • -- Cumin, to taste (go lightly...) • 1 Tbs oil or cooking spray • 1 Cup chicken broth • 1 Lb. potatoes, cut into bite sized pieces Sprinkle chicken with red lemon pepper or salt and pepper. Add oil or cooking spray into stock pot or deep skillet. Stir fry chicken and onion until chicken is browned and onion is transparent. Add green chile salsa, garlic and cumin. Add water to barely cover the chicken mixture. Simmer 15 minutes or more. Add chicken broth and potatoes. Simmer again, 15 minutes or more. Serve with corn bread, biscuits or warm tortillas.
