DIRECTIONS: • 3 medium Yukon Gold potatoes, sliced to 1/4 inch thick • 1 Tbs.- olive oil • 1/2 tsp.- salt • 4 boneless, skinless Halibut fillets • 2 Cups- Sting 'N' Linger Salsa • 2 Tbs.- chopped cilantro for garnish Preheat over to 400 degrees. In a 13x9 glass baking dish mix potatoes with oil and salt to evenly coat. Cover with plastic wrap, turning back one corner for steam to escape. Microwave on high until tender, turning occasionally (approximately 10 minutes.) Arrange fish fillets over potatoes, do not let the fillets touch each other. Spoon Hot Habanero salsa over fillets and potatoes. Bake until fish is done (approximately 10-15 minutes). Garnish with cilantro. © 1997-2004, Salsa2U.com |
