DIRECTIONS: • 1 lb. chicken (deboned) or shrimp (deveined) • 12 flour tortillas • 1/2 cup cheddar cheese, shredded • 1/2 cup monterey jack cheese, shredded • 1 small onion, finely diced • 1/2 red bell pepper, thinly sliced • 1 10 oz. jar Sting 'N' Linger Mango Chipotle Salsa Lightly salt and pepper meat and grill until cooked. Cool and slice into strips. Saute onions and bell peppers. Lay out 6 tortillas. Layer with cheese, meat, onions, bell peppers and more cheese. Top with remaining tortillas and press down firmly. Grill in cast iron skillet or over medium-low fire for a few minutes per side or until crispy outside. Cut into wedges and serve with Sting 'N' Linger Mango Chipotle Salsa!
