DIRECTIONS: • 2 beaten eggs • 3/4 cup Austin Slow Burn Salsa • 1/4 cup medium cracker crumbs • 1/4 cup finely chopped onion • 2 tablespoons roasted bell pepper • 1 teaspoon salt • 1 sprinkle of thyme • 1 1/2 lbs. extra lean ground beef Combine first 7 ingredients. Add ground beef, mix well. Shape mixture into a loaf and place in pan. Bake at 350 degrees for 1 1/4 hours. Try spreading a little tomato paste on top before baking. Makes 6-8 servings.
