DIRECTIONS: • 1 lb.- boneless, skinless, chicken breast • 1 tsp- chili powder • 1/2 cup- chopped green onions • 2 cloves- garlic, finely chopped • 1 can- stewed tomatoes (chopped) • 8 oz.- JC's Midnite Salsa • 1 cup- white corn (frozen or canned) • 1 1/2 cup- cooked brown rice Cook brown rice. Cut chicken breast into small pieces, sprinkle with chili powder and cook in a non-stick skillet (spray skillet with a little non-stick spray). Add green onions and garlic. Saute a couple of minutes. Stir in tomatoes, salsa, corn, and cooked rice. Cover and simmer for 5 minutes, stirring ocassionally. Spoon out and serve. [Serves 4-6] © 1997-2004, Salsa2U.com |
